The White 'Deferlante' by Les Vignes d'Olivier is configured as a genuine and original interpretation of the Languedoc territory, resulting from a peculiar blend of Chenin Blanc, Clairette, and Cinsault vinified in white. After stepping into the world of artisanal wines by working at the historic wine shop in Nice, La Part des Anges, and having trained with important producers like Antoine Arena and Thierry Allemand, in 2013 the vigneron Olivier Cohen plunged into his own winemaking adventure in Argelliers, a small municipality located northwest of the city of Montpellier, in the Herault area.
Les Vignes d'Olivier White 'Deferlante' originates from a blend of Chenin Blanc, Clairette, and Cinsault, varieties cultivated following the principles of organic and biodynamic agriculture on clay and limestone soils. The grapes are hand-picked, and while Chenin Blanc and Clairette are vinified through 15 days of skin maceration, Cinsault is vinified in white through direct pressing. Bothvinifications take place with whole bunches and spontaneous alcoholic fermentation, and after a few months of maturation, the wine is finally ready for market release. Throughout the entire process, the use of clarification, filtration, and sulfurization operations is excluded.
In the glass, the 'Deferlante' White from the artisanal winery Les Vignes d'Olivier shows a sunny golden yellow hue with orange reflections. The olfactory panorama is described by delicate notes of apple, white peach, and bergamot that combine with sweet aromas of wildflowers. A tasting of exceptional freshness and dynamism, with light citrus and saline sensations accompanying the savory and broad finish. A perfect orange wine to enjoy young alongside fresh cheeses.
