William Fevre's Chablis Premier Cru "Vaillons" is a pure Chardonnay with a crisp and essential profile in the most classic style of the great wines of this prestigious Burgundy Appellation. Thanks to a particularly cool climate and soils of a predominantly calcareous nature, the Chardonnay expresses itself in all its extraordinary finesse and aromatic elegance, with subtle floral scents and delicate fruity aromas, always accompanied by a vibrant freshness with mineral tones. It is a northern Chardonnay, intense and sharp, taut and vertical, dedicated to those who love whites of great expressive refinement.
The Premier Cru "Vaillons" is a Chablis produced by a family that has been involved in viticulture for several centuries, although it only began bottling and marketing its wines after World War II. The domain covers 78 hectares, about fifteen of which are classified as Grand Cru and the same number as Premier Cru. The parcels are located on both banks of the Serein River, which runs through the Appellation's territory, on rather heterogeneous soils that include the famous kimméridgien soils and calcareous marls, soils that give the wines a profile of great fine and mineral savoriness, absolutely inimitable. Each parcel is harvested by hand and vinified separately, precisely to bring out the subtle differences and facets of a unique terroir.
William Fevre's Chablis Premier Cru "Vaillons" wine comes from one of the 8 lieu-dits of the Côte des Vaillons, characterized by clay-limestone marls and facing southeast. After the soft pressing of the best grapes, fermentation and subsequent malolactic fermentation take place. The wine matures for a total of about 14 months: for the first 6 months, 50% rests on the fine lees in French oak barriques and the rest in steel. After blending the two masses, ageing is completed in steel tanks. In the glass, it is straw yellow in colour. The bouquet expresses delicate floral scents, aromas of white-fleshed fruit, soft nuances of small pastries and hints of iodine. The sip is dynamic, with a centre of mouth with elegant, multifaceted fruit, supported by a lively freshness, which accompanies a long, mineral finish.
