The vineyards from which the grapes are sourced rise on soils characterized by brown clay and are located 250 meters above sea level in the Monreale area. The harvest is manual, and alcoholic fermentation is spontaneously activated by indigenous yeasts in steel containers. Maceration on the \u003c\/p\u003eskins lasts one day, and subsequently, malolactic fermentation also occurs. The aging is \u003cstrong\u003e7 months always in steel tanks\u003c\/strong\u003e. Even during bottling, the amount of added sulfur is minimal.\u003cbr\u003eThe red “Glouglou” Elios is a delicate, light ruby red, and incredibly clear. On the nose, there are hints of red fruit, small berries, and fresh cherries, punctuated by notes of aromatic herbs that make the aromas pleasant and relaxed. On the palate, the standout characteristics are definitely \u003cstrong\u003efreshness and lightness\u003c\/strong\u003e. It descends into the body gently with a balanced minerality, with a fine and light texture.
