Here, the soils are medium limestone, clayey-sandy in nature, and on them grow vines about 20 years old located at 450 meters above sea level with southern and southeastern exposure. Once in the winery, the clusters are mounded in unglazed concrete tanks for temperature-controlled alcoholic fermentation with a proportion of whole grapes, accompanied by 15-30 days of maceration on the submerged cap skins. The ensuing ageing phase lasts for at least three years, two of which are in large oak barrels and one in cement.
