Beppe Caviola created his Ca' Viola winery in the early 1990s with the intention of enhancing the classic grape varieties of the area. He produces a range of wines of great elegance, capable of interpreting the terroir at its best. The estate is managed with the utmost respect for the environment, using only copper, sulfur and organic fertilizers without resorting to chemical treatments. The Barbera vines are about 20 years old and are grown in the hilly area of Montelupo Albese at an altitude of about 400 meters above sea level. The medium-textured, limestone-clay soils are particularly suited to red grapes, which express themselves with an \u003c\/span\u003e\u003cstrong\u003e\u003cspan data-preserver-spaces=\"true\"\u003eintense and elegant personality\u003c\/span\u003e\u003c\/strong\u003e\u003cspan data-preserver-spaces=\"true\"\u003e. Fermentation is spontaneous, using only indigenous yeasts and with a two- to three-week maceration on the skins. In the glass, it is dark ruby red in colour, with purple highlights.
